Sommelier's Evaluation:Deep brown color with a strong reddish hue. After the salty taste, there's a rich umami (a pleasant savory taste) and an expansion of flavor. It has a powerful aroma reminiscent of heavy roasted coffee and bitter chocolate.

Kuyo Murasaki
This soy sauce is made from a rare tamari (a byproduct of miso paste), derived from just 3% of the precious Kuroyama Temple miso.
Despite its richness, it has a mild flavor with a salt content of 13% (2-4% less salt than regular koikuchi soy sauce), making it a smooth texture.
Sommelier's Evaluation : Extremely complex aroma. Fragrance reminiscent of semi-dried fruits like raisins and prunes. Suitable for use with meat or fish. Excellent with tofu or yuba.

Undersea Aged Soy Sauce
